About Demessey

Demessey is a Burgundian wine house whose wines in this selection focus on Chardonnay from three distinctive origins: Puligny-Montrachet, Meursault and Chablis. Together, they show two important expressions of Burgundy. The Côte de Beaune brings texture, depth and the subtle contribution of maturation, while Chablis is generally cooler, tauter and more overtly driven by limestone. In this context, the Demessey name is associated above all with wines that place the identity of their vineyard site, or climat, at the centre.

The Côte de Beaune, south of Beaune, is one of Burgundy’s essential areas for serious dry white wine. Puligny-Montrachet and Meursault are close neighbours, yet their Chardonnays often have different emphases. Puligny-Montrachet 1er Cru Les Referts comes from a premier cru climat on the Meursault side of the appellation. Wines from this site commonly combine ripe citrus and white stone fruit with floral notes, limestone tension and a firm but refined shape. Meursault 1er Cru La Pièce Sous Le Bois generally presents a broader, more textural face of Chardonnay, while retaining freshness and mineral definition.

Chablis 1er Cru Vaillons provides a useful contrast. Much of Chablis is planted on Kimmeridgian limestone soils, often containing fossilised marine material. Vaillons is a well-known premier cru on the left bank of the Serein, and usually gives an expressive, lively style: lemon, green apple, white flowers, chalk and, at times, a saline impression. Chablis’s cooler conditions help preserve its marked acid line.

The key Demessey wines in this range are therefore not generic Burgundy bottlings, but appellation and premier-cru wines. When young, they suit shellfish, substantial fish dishes and poultry with refined sauces. With bottle age, the richer Côte de Beaune wines may develop more complex notes of hazelnut, butter, honey and dried flowers, whereas Vaillons generally keeps a fresh, stony and saline profile.
