Bourgogne Hautes-Côtes de Beaune comes from the higher plateaux and slopes west of the Côte de Beaune. This altitude generally means a cooler growing season than on the famous lower Côte, a factor that can support freshness and lively structure. Bourgogne Pinot Noir is a regional appellation and often provides an approachable expression of the grape, with red-fruit notes, earthy detail and moderate tannin. Its final character naturally varies with vintage, site and winemaking.

Saint-Aubin lies on the western side of the Côte de Beaune, near Puligny-Montrachet and Chassagne-Montrachet. Les Frionnes is among Saint-Aubin’s Premier Cru vineyards. Chardonnay from this area is often valued for its combination of citrus and orchard fruit, chalky tension and measured texture. The wording on the label matters: Premier Cru identifies a defined, higher-ranked vineyard area within the appellation; it is not an automatic guarantee of one style or quality level in every vintage.

Montagny is farther south in the Côte Chalonnaise and is an appellation devoted exclusively to white wine from Chardonnay. Montagny Premier Cru L’Épaule therefore fits naturally on the white-wine side of the range. At its best, this style can combine ripe white fruit with floral notes, fresh acidity and a discreet mineral impression. Do not serve the whites too cold, so that their aroma and texture can emerge; Pinot Noir works well lightly chilled with poultry, mushrooms or charcuterie.
